- Mince the meat.
- Add salt, pepper, and mix with spices and egg. Depending on the meat you choose, the spices and types of alcohol will vary. For wild boar terrine: Porto or Madeira, juniper berries (5 per kg), coriander seeds (15 per kg), parsley, garlic (2 cloves per kg). For venison: Armagnac, paprika, quatre-épices.
- Mix well, then fill the Le Parfait terrines up to 2 centimetres below the rim. Immediately begin the sterilisation process for three hours at 100°C. Your wild game terrines are ready to enjoy!
