White peach & Elderflower Jam (with Elderflower Cordial)

For 2 Le Parfait Jam Jars 240 ml

  • 650 to 700g White peaches like flat donut peaches
  • 325 to 350g granulated sugar
  • 80 ml Le Parfait elderflower cordial from our recipe, or 40 ml supermarket cordial

  1. Wash and sterilise your jam jars in the oven for 10 minutes at 220F. Wash the peaches. Peel them above a large pan so you don’t loose the juices. Remove the stone. Crush the peaches coarsely with a fork. Add the sugar. At this stage you can either let the mix marinate for a few hours or go straight to step 2).
  2. Cook the mixture on a low to medium heat for about 20 minutes. Put a bit of the mixture on a cold plate in a vertical position: the mix should run slower than water would, however it will still be rather liquid, like a syrup, and the jam should not be completely set, otherwise you will loose the freshness of the peach. The end product will be a perfect spread rather than a hard set jam.
  3. Skim the foam which has appeared on top of the mixture. Add the elderflower cordial, mix and bring back to the boil. Cook for a further 1 minute. Again, do not worry if your mixture is more liquid than usual.
  4. Pour the mixture immediately to the Jam jars. Seal and turn the jars upside down. When the jars are cool store them upright.
