Preparation
- Peel the carrots and leave them whole. Cut the ends of the fennel and celeriac and leave them whole.
- Cut off the ends of the onions and leave them whole and unpeeled. Cut the garlic head in half through the centre.
- Add the water, a good pinch of salt and a few peppercorns. Cook on low heat 45 min.
- Set the vegetables aside to eat later. Filter the broth using a cloth and pour into a jar.
- Close the jar and sterilize for 1 hour at 100°.
