Roasted Cherry Tomatoes in Oil with Chilli Flakes

Ingredients list

  • 1 kilo of cherry tomatoes in a selection of shapes and colours
  • Olive Oil (for drizzling and to add to the jar)
  • 1 teaspoon of sugar
  • 1 teaspoon of salt
  • 1 teaspoon of chilli flakes

Preparation

  1. Preheat the oven to 200°C.
  2. Place a sheet of baking paper over an oven tray and then add the tomatoes, covering with a drizzle of olive oil.
  3. Sprinkle over the salt, sugar and chilli flakes.
  4. Bake in the oven for 40 minutes.
  5. Once cooled, add to your Le Parfait jar and top up with olive oil. Store in the fridge. 

 

Use a spicy topping for bruschetta and crackers or mixed with some fresh pasta.
