Preparation

  1. Peel the tomatoes by blanching them for a minute.
  2. Put a pan of water to boil.
  3. Take two 1.5 litre Le Parfait Super jars and place the tomatoes in them.
  4. Place a jar on the scales and add water up to the line.
  5. Weigh the water and add 2% coarse salt relative to the weight of the water.
  6. Repeat the same operation with the 2nd jar. 
  7. Close and immediately proceed with heat treatment for 2 hours at 100 °C.
