Recipe Plum, apricot, peach and red onion chutney

THIS EASY AND ORIGINAL CHUTNEY RECIPE IDEALLY COMBINES SUMMER STONE FRUITS. MIXED WITH RED ONIONS, THEY MAKE THE PERFECT LIFE-CHANGING SWEET AND SOUR RELISH FOR YOUR HOT AND COLD MEATS.

Ingredients

Number of persons: 4 servings
  • 10 cl wine vinegar
  • 1 clove
  • 1 stick cinnamon
  • 2 pinches grated nutmeg
  • 1 bay leaf
  • 200 g plums
  • 200 g apricots
  • 200 g yellow peaches
  • 200g red onions sliced into rings
  • 100g red port
  • 125g granulated sugar
  • Salt, black pepper

Preparation

  1. Simmer the vinegar for 5 minutes with the clove, cinnamon, nutmeg and bay leaf.
  2. Pour the cubed fruit, onions, port, sugar and filtered vinegar into a large pan. Stir and gently bring to the boil.
  3. Cover and cook for 30 minutes over low heat to form a thick chutney.
  4. Season with salt and pepper and pour the preparation into your Le Parfait Super jars and immediately proceed with heat treatment for 30 minutes at 100°C.
