Plum, Apricot, Peach And Red Onion Chutney

Ingredients list

  • 100 ml wine vinegar
  • 1 clove
  • 1 cinnamon stick
  • 2 pinches nutmeg
  • 1 bay leaf
  • 200 g plums
  • 200 g apricots
  • 200 g yellow peaches
  • 200 g red onions
  • 80 ml red Porto
  • 125 g sugar
  • Salt 
  • Pepper

  1. Simmer the vinegar, clove, cinnamon, nutmeg and bay leaf for 5 minutes.
  2. Remove from the heat and strain the vinegar to remove the whole spices. Set aside.
  3. Chop the fruit into small cubes and dice the onions.
  4. Add the fruits, onions, Porto, sugar and strained vinegar to a pan and bring to the boil, stirring regularly.
  5. Cover and simmer over a gentle heat for 30 minutes, until you achieve a thick consistency.
  6. Season your chutney with salt and pepper.
  7. Pour into jars, seal tightly and proceed immediately to the heat treatment, 60 minutes at 100°C.
  8. Set aside 48 hours before eating.
