  • 250g sugar
  • Half a vanilla pod 
  • 4 pears

  1. Make the syrup: pour the water, sugar and vanilla into a pan and bring to the boil.
  2. To avoid oxidation of the pears: fill 1/3 of the jar with syrup. Peel each pear quickly and put into the jar straight away.
  3. Fill the jar with the remaining syrup until 2 cm from the top. Add the vanilla pod.
  4. Process for 45 minutes in a boiling-water pan.

N.B. If you are preparing a large amount with several jars, keep your peeled pears in lemoned water to avoid oxidation.
