- Peel and cut the pears into pieces. peel and finely slice the onions.
- Cook all the ingredients over low heat for 1 hour, stirring regularly. The mixture should be thick and syrupy.
- Immediately fill your Le Parfait jars to within 2 cm of the rim and proceed immediately to the heat treatment for 60 minutes at 100°C.
Serve with foie gras or meat.
