Passionfruit Curd

Ingredients list

  • 275g passionfruit (12–14 large fruit), which should yield 150ml sieved purée
  • 300g fresh eggs
  • 150g salted butter
  • 225g caster sugar
  • juice of 1 large lemon, approx. 60ml

  1. Cut the passionfruit in half and scrape the seeds and pulp out into a bowl. Discard the shells.
  2. Rub the pulp through a sieve and discard all but 1 tablespoon of the seeds. Keep these aside.
  3. Whisk the weighed eggs lightly until smooth, and sieve them into your pan.
  4. Chop the butter into 1cm cubes and put into the pan. Add the sugar, lemon juice and the sieved passionfruit pulp.
  5. Put some clean jam jars and lids on a baking tray and then into the oven preheated to 100
