Preparation
- Cut your melons in half, remove the seeds and strands, peel them and cut them into pieces about 5 cm long and 3 cm wide.
- Place the pieces overnight in a light vinegar solution.
- The next morning, let the pieces drain completely. In the meantime, prepare a sugar syrup made from a mixture of 750g of sugar and 1 litre of water and bring to the boil.
- Arrange the pieces in layers in the jars, cover them with the syrup and proceed immediately to the heat treatment, 90 minutes at 100°C.
