- In a bowl, mix together the olive oil, garlic, lemon juice, lemon peel and spices (Four spices mix (cinnamon, ginger, nutmeg and clove), Indian spices, or other).
- Coat all sides of the chicken with the mixture. Add salt and pepper.
- Put the chicken thighs in the jars and compress (leaving as little air as possible). Add a tablespoon of the remaining sauce into each jar.
- Seal the jars and proceed immediately to the heat treatment for 2½ hours at 100°C.
