Mediterranean-style chicken thighs

Ingredients list

  • 6 free-range chicken thighs
  • Spices according to taste: Four spices mix (cinnamon, ginger, nutmeg and clove), Indian spices, or other spices
  • Oregano
  • Basil
  • Rosemary
  • The peel and juice of 1 lemon
  • 2 cloves of garlic, chopped
  • 80 ml of olive oil
  • Sea salt and pepper

Preparation

  1. In a bowl, mix together the olive oil, garlic, lemon juice, lemon peel and spices (Four spices mix (cinnamon, ginger, nutmeg and clove), Indian spices, or other).
  2. Coat all sides of the chicken with the mixture. Add salt and pepper.
  3. Put the chicken thighs in the jars and compress (leaving as little air as possible). Add a tablespoon of the remaining sauce into each jar.
  4. Seal the jars and proceed immediately to the heat treatment for 2½ hours at 100°C.
