Ingredients

Number of persons: 8-10 servings
  • 1 liter of court
  • bouillon
  • 1/2 liter of dry white wine
  • 400 g of mackerel
  • 100 g of thick crème fraîche
  • 1 tablespoon of whole-grain mustard
  • 1 tablespoon of capers
  • 3 gherkins
  • salt
  • pepper

Preparation

  1. Make a fish stock with the white wine and mackerel (heads removed and gutted) for 30 min. Leave to cool then drain. Then carefully remove the bones and flake the flesh.
  2. In a bowl, mix the cream and mustard, stir in the capers and gherkins after having blended them. Add the salt and pepper and mix the mackerel flake preparation.
  3. Once evenly mixed, fill the jars with this white wine mackerel recipe up to 2cm from the rim. Carry out heat treatment for 60 minutes at 100°C.

NB: you can also choose not to put everything in jars to taste this mackerel recipe fresh with a dash of lemon. It’s delicious!
