Ingredients list
For the kefir:
1l water
50g raw sugar
25g kefir grains
1/2 untreated organic lemon
1 or 2 dried figs or 1tbsp dried grapes
For the rose and green anise syrup:
100g sugar
200g water
2tbsp green anise
Petals of 10 fresh untreated roses or 6 dried rosebuds

Preparation
First prepare the syrup with the rose and green anise
- Bring the water and sugar to the boil and remove from the heat.
- Add the roses and green anise to the mixture. For fresh roses, cut the white part at the root of the petal with scissors to avoid a bitter taste.
- Leave to infuse, covered, for at least 2 hours. Filter and place in a Le Parfait bottle in the fridge.
Then prepare the kefir
- Dissolve the sugar in the water and pour the mixture into a Le Parfait Super Jar. Roughly chop the lemon with its rind on.
- Add the kefir grains, lemon and dried fruit to the jar. Close the jar without securing the seal and leave for two days at room temperature.
- Filter and add 3 to 10 tablespoons of syrup to taste. The kefir is ready to consume.
It can be stored for 1 month in a closed Le Parfait bottle in the refrigerator.
