Maxime Bertrand, the chef of our “live jar” workshops in France has prepared this recipe to make your own sourdough starter.

100 g chlorine-free water

100 g rye flour (or T80 whole wheat flour)

1 tbsp. honey

1 elastic band

1 litre Le Parfait terrine

Preparation

  1. To start, place the 1 litre Le Parfait Familia Wiss terrine on the scales then add 100 g of rye flour then 100 g of water.
  2. Mix with a wooden spoon.
  3. Add a spoonful of honey (to catalyse the fermentation)
  4. Mix and thoroughly clean the edges.
  5. Put an elastic band around the jar to mark the level of the mixture (to track its development)
  6. Remove the jar’s seal and close the jar.
