- To start, place the 1 litre Le Parfait Familia Wiss terrine on the scales then add 100 g of rye flour then 100 g of water.
- Mix with a wooden spoon.
- Add a spoonful of honey (to catalyse the fermentation)
- Mix and thoroughly clean the edges.
- Put an elastic band around the jar to mark the level of the mixture (to track its development)
- Remove the jar’s seal and close the jar.
