2 lemongrass sticks

Preparation

  1. Cut the ginger, lemongrass and shallot into slices.
  2. Place the fish carcasses on a plate and use a blowtorch to burn the heads and bones.
  3. Place all the ingredients in a saucepan and cover.
  4. Cook for 1 hour without covering on low heat.
  5. Filter the broth using a cloth and pour into a jar.
  6. Close the jar and sterilize for 1 hour at 100°.
