10 kaffir (or coriander) leaves
2 lemongrass sticks
1 shallot
3 fish carcasses

Preparation
- Cut the ginger, lemongrass and shallot into slices.
- Place the fish carcasses on a plate and use a blowtorch to burn the heads and bones.
- Place all the ingredients in a saucepan and cover.
- Cook for 1 hour without covering on low heat.
- Filter the broth using a cloth and pour into a jar.
- Close the jar and sterilize for 1 hour at 100°.
