Fermented Carrot Cake

200 g carrot slices fermented with cumin

175g flour

180 g sugar

3 eggs


1 tsp nutmeg

1 tsp cinnamon

2 tsp baking soda

1 handful of nuts

1 piece of fresh ginger

  1. Preheat the oven to 180°C.
  2. Butter the pan with a brush. 
  3. Crush the walnuts lightly with a mortar or chop them with a knife on the board and roast them in a dry frying pan over low heat. 
  4. Grate the piece of ginger, set aside. Open your jar and coarsely blend the carrots. 
  5. Blanch the eggs with the sugar in a bowl. Add the flour, a pinch of salt, a pinch of each spice powder, the bicarbonate, the roasted nuts and the grated fermented carrots. Mix all ingredients together. Pour the mixture into the cake pan and bake for about 25 min. 
  6. Check for doneness with a sharp knife. Remove the cake from the oven and let it cool.
