Recipe Chicken in yellow wine sauce

You're probably familiar with red, white or rosé wine, but here's a recipe using vin jaune! From the Jura, this wine gives the recipe an original, regional touch. The chicken stands out with its morel mushrooms. Enjoy your meal.

Ingredients

Number of persons: 6 servings
  • Chicken : 2 breasts and 2 drums
  • 500ml of double cream
  • 35 g of dried morels
  • 1 bottle of Yellow wine from Jura
  • Butter
  • Flour
  • Salt and pepper

Preparation

  1. Rehydrate the morels in water for a few hours before cooking.
  2. Coat the chicken pieces in flour then fry them in a pan with the butter until browned slightly.
  3. Add the wine, cream, drained morels and simmer for 20 minutes. Season with salt and pepper.
  4. Fill the Jars Le Parfait Super up to 2 cm from the brim. Seal tightly and proceed immediately to the heat treatment, 90 minutes at 100°C.

 

History has it that…. Yellow wine (Vin jaune) is made from Savagnin grapes and was traditionally produced by the abbesses of Château-Chalon, which abbey was founded in the VIIth century. As the pleasures of the flesh were forbidden to them, it is said that they transferred all their love to the wine… The legend also says that yellow wine was randomly discovered by a winegrower who had forgotten an old barrel in his cellar and discovered, many years later, the delicious metamorphosis of his wine.
