- Soak the gammon for 1 hour in cold water.
- Drain the gammon and pierce with the cloves.
- Place 1 bay leaf in the terrine jar and add the gammon, the peppercorns, the other bay leaves and the wine. Fill up with water without exceeding the maximum mark.
- Sterilise for 2 hours.
Serve thinly sliced. Perfect for ham sandwiches and delicious glazed with honey and grain mustard and heated under a grill.
