Recipe Canned BBQ Sauce

Ingredients

Number of persons: 6-8 servings
  • 1 kg ripe, firm tomatoes
  • 2 pippin apples
  • 2 carrots
  • 2 red peppers
  • 2 onions
  • 2 cloves of garlic
  • 3 glasses of red wine vinegar
  • 2 bay leaves
  • 1 stick of cinnamon
  • 100 g of sugar
  • Olive oil
  • Salt and freshly ground pepper

Preparation

  • Peel the tomatoes and cut them into 4. Peel the carrots and cut them into slices. peel the peppers and cut them into small cubes. peel the onions and chop them. Remove the skin from the garlic cloves then crush them. peel the apples, remove the core and seeds then cut them into cubes.
  • Brown the onion, garlic, carrots and diced red pepper for 15 minutes in a little olive oil. Then add the apples and tomatoes and cook for another 10 minutes. Finally add the herbs, vinegar, sugar and simmer over low heat for a few more minutes.
  • Remove the cinnamon stick and bay leaves. Place everything in a blender. If the barbecue sauce is too thick, add a little water.
  • Open a glass jar and immediately fill it to within 2cm of the rim, then proceed without delay to the heat treatment for 60 min at 100°C.
