  • 1 kg firm, ripe tomatoes
  • 2 pippin apples
  • 2 carrots
  • 2 red peppers
  • 2 onions
  • 2 cloves garlic 
  • 3 glasses red wine vinegar
  • 2 bay leaves
  • 1 cinnamon stick
  • 100g sugar
  • Salt and pepper
  • Olive oil, for cooking

Preparation

  1. Peel tomatoes and chop them roughly. Peel and slice carrots. Seed and dice red peppers. Peel and dice onions. Peel and crush garlic. Peel, core and dice apples.
  2. Cook the onions, garlic, carrots and peppers for 15 minutes in a splash of olive oil. Add the apples and tomatoes and cook another 10 minutes. Then add the cinnamon, bay leaves, vinegar, sugar and a pinch of salt and pepper and simmer gently for a few minutes. 
  3. Remove the cinnamon stick and bay leaves. Transfer the remaining ingredients to a blender and blitz until smooth. Adjust seasoning to taste. If the sauce seems a bit thick, add some water.
  4. Immediately fill Le Parfait to 2 cm below the brim, seal tightly and proceed immediately to the heat treatment, 60 minutes at 100°C.
