Ingredients list
- 1 kg firm, ripe tomatoes
- 2 pippin apples
- 2 carrots
- 2 red peppers
- 2 onions
- 2 cloves garlic
- 3 glasses red wine vinegar
- 2 bay leaves
- 1 cinnamon stick
- 100g sugar
- Salt and pepper
- Olive oil, for cooking

Preparation
- Peel tomatoes and chop them roughly. Peel and slice carrots. Seed and dice red peppers. Peel and dice onions. Peel and crush garlic. Peel, core and dice apples.
- Cook the onions, garlic, carrots and peppers for 15 minutes in a splash of olive oil. Add the apples and tomatoes and cook another 10 minutes. Then add the cinnamon, bay leaves, vinegar, sugar and a pinch of salt and pepper and simmer gently for a few minutes.
- Remove the cinnamon stick and bay leaves. Transfer the remaining ingredients to a blender and blitz until smooth. Adjust seasoning to taste. If the sauce seems a bit thick, add some water.
- Immediately fill Le Parfait to 2 cm below the brim, seal tightly and proceed immediately to the heat treatment, 60 minutes at 100°C.
