We often hear that home canning is the preserve of spring and summer, when fruit overflows from the trees and vegetable gardens produce in abundance. It’s true…but not that ! Winter preserves do exist, and they have more than one trick in their jar. 

So, if this year you've made the resolution to eat better, consume smarter or spend more intelligently (or all three at once, let's be crazy), January is the perfect time to get started. And good news: we are here to guide you!

And if you don't want to start straight away with recipes requiring heat treatment, fermentation is an excellent entry point: simple, fun and deliciously lively.
