5 – Clementines with brandy
A deliciously retro and terribly elegant gift!
Brandy clementines require a little patience, but the result is well worth it. Still consume in moderation!

Active preparation: 45 minutes

Maceration: minimum 2 months (ideally 3 to 6 months)
🧺 Ingredients:
-
10 to 12 untreated clementines (small to medium)
-
400 g of sugar
-
400 ml ofwater
-
1 vanilla pod split (or 1 star anise for a spicier version)
-
1 cinnamon stick (optional, but very festive 🎄)
-
Approximately 700 to 800 ml of white brandy (or fine, marc, or vodka at 40–45°)
👩 Step by step preparation:

Prepare the fruit:
-
Wash the clementines carefully and dry them.
-
Prick them 3 to 4 times with a fine needle so that the syrup penetrates well.
-
If they are large, you can peel them raw for a more refined finish.

Prepare the syrup:
-
In a large saucepan, bring the water and sugar to a boil.
-
Add the split vanilla pod and cinnamon.
-
Leave to simmer for 5 minutes, then add the clementines.
-
Leash poach over low heat for 10 to 15 minutes until they become slightly translucent.
-
Leave to cool completely in the syrup.
-
Put in jars:
-
Gently arrange the clementines in the sterilized jars.
-
Pour the syrup until the fruit is two-thirds covered.
-
Complete with brandy until the clementines are perfectly covered.

Closes airtight.

Maceration:
-
Store the jars in a cool, dry place away from light.
-
Let it rest at least 2 months before tasting.

Gently shake the jars every 2 to 3 weeks to mix well.
