Last year, we had the pleasure to talk about fermentation with Sang-Hoon Degeimbre, the 2 Michelin stars chef from L’Air du temps, in Belgium.
We learned why fermentation is so important (to preserve vegetable of its garden), its benefits (perfect to highlight the products and add flavours) and – this is where it gets interesting – what are Sang-Hoon’s favourites recipes!
And you know us, we are curious and we are hungry! So we could not resist and ask him to give us a little teaser of its cuisine! On the menu? A kimchi, and not any kind of kimchi, but two true ancestral recipes from South Korea, where the chef was born!
So we went to Brussels, we gather around in in San’s Kitchen with friends, and spent 3 hours learning how to make which is probably (well if you ask us) the tastier kimchi ever!
And, as you know by now, at Le Parfait, we love to preserve, but we also really love to share, so grab a jar, grab your tote bag, and run to your farmer’s market because you’re going to cook a 2 starred Kimchi :)
