- For this pineapple recipe, choose a ripe pineapple, peel it, remove the woody part in the center and cut it into diced about 1 cm.
- Weigh 1.2 kg of pineapple flesh. Put the pineapple, lemon juice and sugar in the bassine with bonfit, mix and carry to ebullition.
- From this moment, count the cooking time: 7 minutes with a giant sugar, otherwise 15 to 20 minutes.
- Check the cooking by pouring a few drops on a cold plate then tip the plate: the pineapple jam must run gently.
- Split and proceed without waiting for the pots of your homemade pineapple jam. Return the jumpers for 1 min, then put them back to it so that they cool.
Tips: At the end of cooking, you can add a vanilla pod cut into 5 or 6 pieces (as much as pots).
