Recipe Claudes (plums) with brandy

Ingredients

  • 250 g de sucre
  • Eau de vie à 45°C

Preparation

  1. Choose very ripe and perfectly healthy plums. Rinse them, wipe them and prick them with a large needle.
  2. In a bassine with a bonfit, bring to ebulition 50 cl of water added 250 g of sugar.
  3. Boil for 2 minutes, then soak the plums for a short time so that they can get a syrup film. Using a skimmer, transfer them to the jars Le Parfait Great.
  4. Leave to cool, then cover the plums with 45 ° C-fruit brandy and close. The fruits must always be fully covered. 
  5. Repeat the level of your preserves of plum as the plums absorb alcoholic drink.
  6. Store your plums in homemade jars in a dry, fresh place, sheltered from light and wait two months before consuming these plums with brandy.
