Ingredients

  • 3 medium courgettes
  • 50g olive oil
  • Parsley
  • Lemon juice
  • Salt
  • Pepper
  • 2 cloves garlic

Preparation

1. Preheat the oven to 180°C.
2. Wash and slice the courgettes, then arrange them on a baking tray lined with baking paper.
3. Peel the garlic and add to the courgettes. Sprinkle with oil, salt and pepper.
4. Place in the oven for 25 minutes at 180°C.
5. Add the cooked courgettes and garlic to the blender with the lemon juice and parsley. Blend finely. Taste and adjust the seasoning to taste.
6. Fill the terrines to the level indicated by the line (approx. 2 cm from the edge). Close the terrines and heat immediately for 45 minutes at 100°C.
