  • Choose fresh endives, remove the outer and damaged leaves, cut the roots flush with the leaves.
  • Clean the endives in water then blanch them for 6 to 8 minutes in boiling water with lemon juice.
  • Drain them quickly, then immediately store them head to tail in the Le Parfait Super jars.
  • Cover up to 2 cm from the edge with boiling water, salted at 20 g / liter (you can add the juice of a lemon).
  • Close and immediately proceed to the heat treatment for 1h30 at 100°C for 1/2 liter Le Parfait Super jars, and 1h45 at 100°C for 1 liter Le Parfait Super jars. Your canned endives are finished.
