Recipe Preserved whole tomatoes

- Choose medium, firm tomatoes.
- Boil them for a few seconds then peel the tomatoes. Remove the stem attachment.
- Place the peeled tomatoes in the Le Parfait Super jars and cover them with boiling brine, salted at 20 g/liter up to 2 cm from the rim.
- Close and immediately heat treat your canned tomatoes for 1 hour at 100°C.
Forget the tomato paste purchased ready-made and opt for homemade with Le Parfait!
You can also keep whole, unpeeled tomatoes. To do this, wash them carefully then prick them with a needle. Arrange the tomatoes in the jars without packing them too much then cover with boiling brine, salted at 20g/litre to within 2cm of the rim. Close the jar and immediately heat treat for 1 hour at 100°C.
