Recipe Lemon and rosemary salt

  • 300 g organic coarse salt or sea salt
  • 100 g lemon zest
  • 2 rosemary sprigs

Wash your lemons and rosemary.
Remove the peel from the lemon, and separate the rosemary sprigs from the branches. Place everything in an ovenproof dish.
Place the rosemary, lemon and salt in the oven for 45 minutes at 100°C, then leave to cool.
Mix together in your terrine.
If you don't want to put your salt in the oven, you can simply dry the lemon and rosemary, then blend them together before placing them in your terrine!
