Number of persons: 6-8 servings
  • 2.5 kg of very ripe tomatoes
  • 2 onions
  • 2 or 3 cloves of garlic
  • 1 bay leaf
  • 1 small bunch of thyme
  • 1 bunch of parsley
  • Basil or tarragon leaves
  • 1 tbsp. teaspoon of sugar according to taste
  • Four spices
  • 1 tbsp. tablespoon of olive oil
  • Salt, pepper

  • Start this homemade canned tomato sauce by rinsing the tomatoes. Then remove the seeds and peel the tomatoes.
  • Dice the tomatoes.
  • Mince the onion and sauté in olive oil in a frying pan with the peeled garlic cloves. Add the peeled tomato pieces, aromatic herbs, allspice and sugar. Season with salt and pepper. Cook gently for around thirty minutes.
  • Purée in a blender.
  • Finish this tomato sauce recipe by filling the Le Parfait Super jars to within 2 cm of the rim, sealing tightly, then immediately heat process for 45 minutes at 100°C.
