Recipe Canned garden tomato coulis

Garden tomatoes have an incomparable fragrance and taste! Preserve their flavours in a homemade tomato coulis that will make THE difference. Cherry tomato, pear, beef heart, etc. Have fun using all these tomato varieties in this recipe. You'll be able to pull out your mould jars at any time to enhance simple pasta dishes or line the bottom of your pizzas.

Ingredients

  • 1 kg garden tomatoes
  • 2 garlic cloves
  • 2 large onions
  • 1 sprig thyme
  • 4 to 5 sprigs parsley
  • Olive oil
  • 20 cl beef stock
  • 1 tsp sugar
  • Salt and pepper

Preparation

  • Scald the tomatoes for a few moments to make them easier to peel. Cut them into pieces and remove the seeds.
  • Peel and chop the onions, peel the garlic cloves and remove the germ, wash and drain the herbs.
  • Pour 1 tbsp olive oil, the crumbled thyme, 4 to 5 sprigs chopped parsley, 1 tsp sugar, the onion, garlic and tomatoes into a saucepan and cook over a low heat for 15 to 20 minutes, stirring regularly. Season with salt and pepper.
  • Heat the beef stock and add to the mixture, then blend.
  • Continue cooking until thickened.
  • Immediately fill the Le Parfait Super jars to within 2 cm of the rim. Close and heat immediately for 45 minutes at 100°C.
