Recipe Fruit and spice casserole

Good seasonal fruit simmered with sugar and spices makes a great recipe. The hardest part is not making it, but not cracking before storing it. Gourmets will have to wait to enjoy it.

Ingredients

Number of persons: 4-6 servings
  • 400 g Mirabelle plums
  • 4 figs
  • 2 peaches
  • 8 plums
  • 2 nectarines
  • 200 g caster sugar
  • 50 cl dry white wine
  • 1 untreated lemon
  • 2 vanilla pods
  • 2 cinnamon stick
  • 4 cracked black peppercorns

Preparation

  • Split the vanilla pods and scrape the seeds over the top of the pan. Wash the lemon, remove the zest and add it to the pan. Add the cinnamon, pepper, sugar and wine. Place over the heat.
  • Wash the fruit, remove the stones and cut into 4 pieces (peaches, nectarines and figs if large, mirabelles and plums in 2 pieces).
  • As soon as the contents of the pan boil, add the fruit (you may add the lemon juice), stir and simmer over a low heat for 5 minutes.
  • Immediately fill the Le Parfait Super jars to within 2 cm of the rim. Close and heat immediately for 30 minutes at 100°C.
