- Melt the butter in a stew pot, add the olive oil and brown the roast on both sides.
- Once browned, insert the garlic into the roast, sprinkle with salt, pepper and rosemary.
- Take off the heat and coat the roast with the honey-mustard mixture.
- Put the roast into a Le Parfait Super or Le Parfait Familia Wiss terrine, filling it up to 2 cm from the top (without adding any liquid). Proceed immediately to the heat treatment for 3 hours at 100°C.
