- Make the roast as you would usually (as if you were planning to eat a roast of the same size). Add the salt, pepper, thyme and bay leaf.
- Put it in a Le Parfait Super or Le Parfait Familia Wiss terrine that is the right size to allow minimum space for air, while leaving 2 cm from the top. Do not add any liquid.
- Seal and proceed immediately to the heat treatment for 3 hours at 100°C.
Note: This preserved roast is perfect to take for a picnic.
