Preparation

  1. Wash, peel (slit the lower part of the stem and pull up to remove the filaments) and cut the stems into pieces.
  2. Blanch them for 2 minutes in boiling water, then cool immediately with cold water.
  3. Let them drain a few minutes, then place the pieces in “Le Parfait Super” jars. Cover in salted boiling water (20 g per litre), filling up to 2 cm from the rim.
  4. Close and proceed immediately with heat treatment, 1 hour 15 min, at 100°C.
