To make fruit preserves in syrup, you need to make a syrup from water and sugar, which acts as the covering liquid. Below are the sugar contents of the syrups you need to make :
- Fruit in light syrup: 1 litre of water + 250 g of sugar.
- Fruit in medium syrup: 1 litre of water + 400 g of sugar.
- Fruit in heavy syrup: 1 litre of water + 750 g of sugar.
- Fruit in light syrup: 1 litre of water + 250 g of sugar.
- Fruit in medium syrup: 1 litre of water + 400 g of sugar.
- Fruit in heavy syrup: 1 litre of water + 750 g of sugar.
- Peel the pineapple and cut into quarters. Fill the jars with the pineapple pieces.
- Make the syrup by mixing the water and sugar and bringing to the boil. Immediately cover the pineapple with the syrup to within 2 cm of the rim.
- Close and heat immediately, 30 mins at 100°C for a light syrup. Otherwise 35 minutes at 100°C for other syrups.
