- Brush, wash then cut both ends of the cucumbers.
- Lightly prick the surface of the cucumbers with a fork, sprinkle with salt and set aside for a few hours.
- Rinse them and let them soak for a few hours or even overnight in water.
- Place the cucumbers in jars with a composition of herbs and cover with boiling brine measured at 50g of salt per 1L of water.
- Close and proceed without delay to the heat treatment of this fresh recipe, 40 minutes at 100°C.
