  • 250 g pears
  • 150 g onions
  • 50 g raisins
  • 100 g brown sugar
  • 120 ml cider vinegar
  • ½ teaspoon ginger powder
  • Juice of 1 lemon
  • Pinch chilli powder

Preparation

  1. Peel the pears and chop into chunks. Peel and finely chop the onions.
  2. Cook all the ingredients together over a gentle heat for an hour, stirring regularly. The chutney should be thick and syrupy.
  3. Pour the chutney into the jars, to 2 cm below the brim, seal tightly and proceed immediately to the heat treatment, 60 minutes at 100°C.


Good to know: Delicious with Foie Gras or meat.
