Recipe Natural porcini mushrooms

Preserving one of the most sought-after vegetables is clever. When you know that it is one of the lightest, it's reassuring. So preparing it naturally, there's nothing better so you can always have it on hand. As an accompaniment to meats, in pies or pies, in sauce... porcini mushrooms, they're all good!

Ingredients

  • Porcini mushrooms
  • Oil
  • Salt

We recommend: Jars Le Parfait Super > Jar - 0,25 l (Diameter : 70)

Preparation

  • Choose fresh porcini mushrooms, clean them by removing the earthy or damaged parts and dry them with a damp cloth. avoid rinsing them. If it is really necessary, quickly run them under cold water and drain them on a cloth. We recommend separating the feet and heads.
  • Brown the porcini mushrooms in hot oil for about 15 minutes.
  • Salt lightly. Leave to cool then store the porcini mushrooms in the Le Parfait jars.
  • Add a little oil and immediately proceed to the heat treatment for 1 hour 45 minutes at 100°C.


Tip: After opening the jars, brown your porcini mushrooms over low heat with a little olive oil. Depending on your taste, you can add garlic, parsley or shallots. Serve hot!

Je fais des conserves de cèpes depuis des années.
Dimanche dernier j’ai ouvert un bocal de 2021 qui présentée les mêmes symptômes
J’ai failli le jeter.
Après cuisson ils étaient délicieux.
Pareil hier avec un bocal de 2022.🤷
J’en connais pas la raison.

Bonjour,
Mes bocaux de cèpes ont une odeur légèrement acide à l’ouverture (pas du tout la bonne odeur de cèpes qu’ils avaient quand je les ai mis en bocal) mais celle ci disparaît après cuisson à la poêle.
Est ce normal ?

Bonjour,
Mes bocaux de cèpes ont une odeur légèrement acide à l’ouverture (pas la bonne odeur de champignons qu’ils avaient il y a un an quand je les ai mis dans le bocal), est ce normal ?
Après cuisson à la poêle tout semble à nouveau dans l’ordre.
J’ai déjà remarqué cette odeur avec la soupe de courgette.
