Recipe Fig chutney with spices

- Bring 25 cl of water to the boil and add the tea, lemon (juice and zest), cinnamon and cardamom.
- Reduce by half over a low heat and strain.
- Fry the onion and ginger in the oil and add the figs.
- Cover with the fragrant tea and simmer for around 1 hour over a very low heat.
- Check that the chutney is cooked by pouring a few drops onto a cold plate and then tilting the plate. The chutney should run gently.
- Skim off the skimmed fat and pour into jars without delay.
