Recipe Fig chutney with spices

What if you didn't just sweeten strawberries! Give your meat a sweet twist with this delicious and flavoursome chutney. Original with its hints of tea, cardamom, ginger and cinnamon, it's well worth making and savouring!

Ingredients

Number of persons: 6-8 servings
  • 350 g fresh figs, cut into 4
  • 1/2 finely chopped onion
  • 1 lemon
  • 1 cinnamon stick
  • 1 teaspoon cardamom seeds
  • 1 teaspoon fragrant black tea
  • 1 teaspoon chopped fresh ginger
  • 1.5 teaspoons oil

Preparation

  • Bring 25 cl of water to the boil and add the tea, lemon (juice and zest), cinnamon and cardamom.
  • Reduce by half over a low heat and strain.
  • Fry the onion and ginger in the oil and add the figs.
  • Cover with the fragrant tea and simmer for around 1 hour over a very low heat.
  • Check that the chutney is cooked by pouring a few drops onto a cold plate and then tilting the plate. The chutney should run gently.
  • Skim off the skimmed fat and pour into jars without delay.
