Procedure : 1. Choose firm, medium-sized tomatoes. 2. Scald them for a few seconds and peel. Remove the stalks. 3. Arrange tomatoes in Le Parfait Super jars and cover up with boiling brine (20 g salt per litre of water) to within 2 cm from rim. 4. Close and heat for 45 minutes in a pressure-cooker |
