Mulberry jam

Cooking Time : 1 hour

Ingredients :

- 1.3kg mulberry
- 1kg jam sugar
- 1 lemon
- 10 mint leaves

Procedure :

1. Rinse mulberries in cold water.

2. Squeeze the lemon to extract juice.

3. Pour the mulberries, lemon juice, mint leaves and sugar in jam bowl, blend with water and soak for a few hours.

4. Heat the water and fruit mixture to boiling point. From this moment, count the cooking time : cook for 7 minutes with a jam sugar, otherwise cook for 15 to 20 minutes.

5. Keep a brisk heat and stir often. Two minutes before the end, crush the mulberries with a perforated spoon.

6. To check the cooking, pour a few drops onto a cold plate. Tilt the plate; the jam should flow slowly flow slowly. If it is too runny cook further.

7. Foam and pour immediately into jars. Seal and cool.
