Little mixed vegetables

Ingredients :

- 15 to 20 cherry tomatoes, cauliflower florets, 250g haricot beans, 10 baby carrots, 4 sticks of celery, 2 laurel leaves, 2 cloves, 2 sprigs tarragon, 2 garlic cloves, 2 small red onions, salt, 20 peppercorns

Procedure :

1. Clean the vegetables (haricot beans, cherry tomatoes, carrots, celery, cauliflower). Cut carrots and celery. Scald cherry tomatoes, carrots, celery and cauliflower for 1 to 2 minutes in boiling water. Soak the haricot beans in cold water for a few minutes then scald them for 10 minutes.

2. Reserve them separately and drain.

3. Position each vegetable in successive layers in Le Parfait jars, finishing with the tomatoes. Insert laurel leaves, sprigs tarragon, cloves, garlic cloves and pepper.

4. Cover with boiling salted water (20g of salt per litre) to within 10 cm of the rim (do not overfill as the beans will swell).

5. Close and heat for 1 ¼ hours in a pressure cooker. pressure-cooker.

Tip : This recipe give you the opportunity to add other vegetables (peas, turnips, etc.)
