Recipe Rabbit Terrine with Whiskey

This morning, a rabbit... This recipe will transform it into an excellent terrine that will delight your aperitifs, your gourmet starters or your tasty picnics! With its hint of whiskey, your rabbit terrine will have a particular, more sophisticated taste. No jar, you will have to wait at least 3 months before you can taste it, so don't wait any longer!

Ingredients

Number of persons: 4-8 servings
  • Rabbit 1 kg
  • Pig throat = 200 to 300 g
  • Herbes de Provence
  • Salt = 11 g / Kg
  • Pepper = 3 g / Kg
  • Whiskey = 12 cl
  • Shallot = 3 g / Kg
  • 2 Eggs

Preparation

  • Cut the rabbit and pig meat into small pieces.
  • Pass everything through a medium-sized mincer, including the shallots.
  • Then add the spices, whiskey and whole eggs, mix well.
  • Fill the Le Parfait terrines with this preparation to within 2 cm of the edge and immediately heat treat for 3 hours at 100°C. Store for at least 3 months before consuming.
