Recipe Country pâté with turmeric

This is a great recipe for homemade pâté de campagne with a hint of turmeric that makes all the difference! The 40 minutes you take to make it will be well spent! Enjoy it all year round on baguettes or slices of farmhouse bread.

Ingredients

Number of persons: Several

For 2.5 kg of pâté :

  • 1 kg pork belly
  • 1 kg pork belly
  • 500 g pork liver
  • 10 cl Cognac
  • 3 eggs
  • 25 cl milk
  • 45 g fine salt
  • 5 g ground pepper
  • 5 g Rabelais spices
  • 10 g turmeric

Preparation

  • The day before, cut the pork liver into strips and marinate in the Cognac.
  • Cut the pork belly and neck into strips and put them through the mincer with the liver, using the medium grid on the machine.
  • Place the minced meat (belly, neck and liver) in a large bowl, then add the eggs, milk, spices and turmeric. Season with salt and pepper and mix well with your hands.
  • Leave to stand in a cool place for one to two hours.
  • Mix well again and add the mixture to the Le Parfait Super or Le Parfait Familia Wiss Terrines, then heat during 3 hours at 100°C.
