Recipe Nectarine & Raspberry Jam

Spread out the flavours of summer with this preserve combining the deliciously sweet, sumptuous flash of nectarine, cousin of the peach, with the subtle flavour of rasberry. With this recipe, you'll be lucky enough to savour these flavours all year round.

Ingredients

  • 400g nectarines, stones removed
  • 400g raspberries
  • 700g granulated sugar
  • 1 small lime
  • Nutmeg

Preparation

  1. Wash and remove the stones from the nectarines. Weigh out 400g of the stoneless nectarines and chop them into pieces.
  2. Wash the lime and slice it into rounds, removing the pips.
  3. Add ½ glass of water to the sugar in your preserving pan and bring it to the boil, then add the nectarines, raspberries, lime and a ½ teaspoon of grated nutmeg. Leave it to cook for 7 minutes.
  4. Check its progress by pouring a few drops onto a cold plate and tilting it. The preserve should very slowly trickle down.
  5. Skim off the scum, then decant the preserve into jars immediately.
