Ingredients

Number of persons: Several
  • 1 duck foie gras of 500g
  • Fleur de sel
  • 1 pinch of powdered sugar
  • Peppe

(NB: The seasoning salt, pepper, sugar depends on individual taste)

Preparation

  • Prepare the foie gras. Using a sharp knife, remove the veins, clots and greenish parts of the liver.
  • Mix the fleur de sel, pepper and a pinch of powdered sugar.
  • Massage the liver with this mixture then place it in the terrines, pressing gently to remove the air up to 2 centimeters from the edge.
  • Close and immediately proceed to heat treatment, 45 minutes at 100°C.
